Gyuto 210x50mm, San Maï hand forged in Sheffield from 26c3 high carbon steel core and mild steel clad.
This knife is a Gyuto with a thick spine but thin behind the edge. The heavy box wood handle give me a nice balance and the thin tip make it great for intricate work.
Kurouchi finish, flat grind, Kasumi ready. Double bevel

Distal taper from 4.75mm to 2.75mm to 0.90mm
Wa handle made from Box wood (Buxus sempervirens), 132mm length.
