Chinese cleaver 185x80mm, San-maï blade 135Cr3 high carbon steel core and Suminagashi cladding (pure iron and soft steel layers)
Very tall blade with a good weight to chop hard vegetables and meat. It's not a meat cleaver, please don't cut big bones with it (poultry will be fine 👌🏻). Distal taper from 4.7mm at the handle to 2.4 mm mid blade to 1mm at the tip. Core harden at 63-64HRC.
Kurouchi blade, flat double bevel with Kasumi polish.
Weight : 310 gr / Balance point : blade heavy 40mm from the heel
Wa handle made from Bog Oak (UK, 3300BC) and English Yew 145mm length.

My blades are made from carbon steel not stainless steel, it gives my knives an unbeatable sharpness. I prefer carbon steel for it ease to sharpen, the fine edge it takes and the beautiful patina that will develop. You do, however, need to give carbon steel knives just a little extra care to keep them in top shape. There are trade-offs in everything.
The knife is polished using whetstones. It will be easier for your to maintain it or to improve my work.
