Gyuto 175x55mm, San Maï hand forged in Sheffield from 26c3 high carbon steel core and mild steel clad.
This knife is a more a French profil with a flat heel. Very thin behind the edge, the grind is asymetrical for right handed people.
Kurouchi finish, asymetrical grind, satin finish. Double bevel
Weight : 140 gr / Balance point : at the maker mark
Distal taper from 3.70mm to 1.70mm to 0.70mm
Wa handle made from American black walnut ferrule and ebonised English Oak, 150mm length.
