Sujihiki 185x30mm, San Maï hand forged from 26C3 Core and Stainless steel clad in Sheffield.
This knife have a very thin blade to my standard. It a small slicer and will cut nicely boneless meat and fish. Very light overall with an extra long handle.
Kurouchi finish, flat grind, etched. Double bevel
Weight : 107 gr / Balance point : behind the maker mark
Distal taper from 2.70mm to 2.20mm to 0.90mm
Wa handle made from cross cut Elm (Ulmus procera), 155mm length.
