Sujihiki 285x50mm, San-maï hand forged from 135Cr3 high carbon steel core and soft steel clad in Sheffield.
This knife is more an hybrid between a Suji and a Gyuto. Being quite tall (50mm) it allow to be use on the chopping board as well as a slicer. The heavy and high polish Box wood handle help to balance the knife.
Flat bevel, satin finish. Double bevel
Weight : 237 gr / Balance point : 40mm from the maker mark blade heavy
Wa handle made from a unique piece of Box wood (Buxus sempervirens), 150mm length.
