Gyuto 285x50mm, San-maï hand forged from 135Cr3 high carbon steel core and soft steel clad in Sheffield.
This knife is an hybrid between a Suji and a Gyuto. Being quite tall (50mm) it allow to be use on the chopping board as well as a slicer. The heavy bog oak and brass handle give a good balance to the knife. Distal Taper from 3.9mm to 2.2mm to 0.7mm

Wa handle made from Dark bog Oak (3300BC) and thick brass spacer, 160mm length.
